What’s One Prep You Wish You’d Started Sooner?

Wish I’d started practicing rainwater collection sooner. Once you realize how fast your stored water runs low, especially in the summer, it’s a real wake-up call. Anyone else regret waiting on setting up barrels or filtration systems? Curious to know what preps others wish they hadn’t put off—
 
Absolutely wish I'd learned to can veggies earlier—so much produce wasted over the years. Anyone else feel like they missed out on preserving their garden surplus?

Canning’s been on my mind too—so much lettuce and tomatoes ended up as compost instead of soup or sauce in past years. If I’d gotten over my fear of all those jars and pressure cookers, my pantry would look a lot different right now. BlueMarigold, you’re absolutely right about the waste; it’s a bit painful to think about. On the bright side, learning the ropes now is at least preventing future regrets. What’s your go-to veggie to can these days?
 
Canning is right up there on my regret list too. I can’t believe how many green beans and cucumbers I let go to waste because I was intimidated by the process. It always seemed so complicated until I actually tried it—now I can’t stop
