Best Foods to Stockpile for Long-Term Emergencies?

Looking to bulk up my food stores but want to focus on items with the best shelf life and nutritional value. What have folks found truly lasts long-term without sacrificing taste or health? Any underrated staples I should consider besides the usual rice and beans?

Freeze-dried veggies and fruits are underrated in my opinion—lightweight, last ages, and still keep a good chunk of their vitamins. Also, canned fish like sardines or salmon add protein and healthy fats without needing much space. Don’t forget whole grains beyond rice, like barley or farro; they store well and give more variety. Has anyone here had luck storing powdered eggs long-term?

Powdered eggs actually store surprisingly well if kept cool and dry—used ‘em after a year and they were fine. Anyone tried dehydrated tofu for protein variety?

Dehydrated tofu’s new to me—does it rehydrate to a decent texture, or is it more for soups and stews? I’m always hunting for protein options that break up the usual routine.
