Best Homegrown Veggies for Long Term Survival – Your Take?

Looking to tap into the collective wisdom here, especially as I take stock of the upcoming planting season. I've always found that growing your own food is one of the most essential survival skills. But I reckon, not all veggies are created equal when it comes to sustainability and nutrition.

My top three are potatoes, carrots, and green beans. Potatoes are calorically dense and can be stored for a good while if done right. Carrots provide essential nutrients and can also be stored for a decent amount of time. Green beans, on the other hand, are easy to can and provide a decent amount of protein for a veggie.

Now here's where I need your input: what other veggies would you recommend for long-term survival and why? Bear in mind, I'm not just talking about growing them, but also storing them for off-seasons. What methods have worked best for you in terms of preservation? Looking forward to your insights!
