Really wish I’d started pressure canning meats earlier—it was intimidating at first, but now it’s a game changer for long-term food security. What’s one prep you folks regret not tackling sooner? Interested to hear if there’s something that made a big impact for you too.

Pressure canning definitely looks intimidating at first! I felt the same way about learning to use a pressure canner and put it off for ages, especially with meats—now I wish I’d jumped in sooner, too. Pressure canning meats felt too daunting for me for years, so I totally get where you’re coming from—wish I’d tackled that sooner, too! Something else I hesitated on was learning to cook from scratch with what I actually store, instead of just stashing cans and dried goods. It made a huge difference in confidence when I finally did. BlueMarigold, did you find any particular source or book especially helpful for pressure canning, or was it more trial and error for you?
