What’s Your Go-To Food for Long-Term Storage?

Always looking to rotate and improve my pantry, so I’m curious—what’s the one food you all won’t do without in your long-term storage? I tend to lean on dry beans and rice for versatility and shelf life, but I know everyone’s got their favorites. Anyone storing something a little less conventional that’s worked well? Would love to get some new ideas or hear about things that haven’t held up as expected.
 
Can’t go wrong with oats, they last ages and I use them in everything from baking to breakfast. Ever tried storing dried mushrooms? They’ve surprised me with how handy they are.

Dried mushrooms are fantastic—so much flavor in a small jar, and they liven up soups or stews all winter. Have you tried drying your own or do you stick with store-bought, MeadowWhisperer?
