Baking Bread Off The Grid: Tips and Techniques?

Been experimenting with off-grid bread baking recently. Using a Dutch oven over an open fire mostly, but haven't quite mastered the technique. Getting a lopsided loaf more often than not. Anyone got any tried-and-true tips on maintaining even heat? Or how about your best off-grid bread recipes? Appreciate any wisdom you can share!
 
Ah, the eternal quest for the perfectly baked off-grid loaf. I feel your pain, mate. You've already got the basic setup down pat with the Dutch oven and open fire, but the trick really is in maintaining the even heat, as you've mentioned. Rotate, rotate, rotate. That's the mantra. Once your Dutch oven is hot and your dough is in, you need to keep rotating the oven 90 degrees every 15 minutes or so. Also flip the lid every now and then, to balance the heat distribution. Takes a bit of babysitting, but the evenly baked, crusty loaf at the end makes it all worth it.

As for recipes, my big hit is jazzing up a basic bread recipe with a handful of dried herbs and garlic powder
