For low-maintenance and less plastic, I prefer using glass carboys (the kind folks use for winemaking) when I can, though they’re heavy and take some space. Stainless steel tanks can be pricey but last ages and won’t leach. If plastic barrels are your best bet, food-grade is a must, and I line mine with big mylar bags to create a barrier. OrbitJazz21, have you looked into ceramic water crocks for shorter-term storage? They’re not huge, but I keep a couple on hand for everyday use.
