Dehydrating Veggies: Dos and Donts for Long-Term Storage?

Just finished up my latest batch of dehydrated veggies and got to thinking... we often talk about the process but what about the after-process? You know, the storage part, where the longevity of our hard work plays out.

I've got a well-practiced routine - vacuum seal, toss into a dark, cool pantry, and cross my fingers. Still, when it comes to long-term storage, I'm always looking for ways to improve.

Are there any particular materials that are a no-go for storing dehydrated foods? I've heard whispers about certain plastics leaching chemicals. And what about oxygen absorbers? Is it overkill to use them in combination with vacuum sealing?

Also, what's the longest anyone's kept their dehydrated stuff good to eat? I've managed a year, but I'd love to hear some inspiration from you all.

Appreciate anyone chiming in with experiences, knowledge, or even just good ol' fashioned opinions. Let's make sure our preps are as bulletproof as possible, folks!

Well, now, you're right on the money about the importance of proper storage. Been dehydrating and storing my own fruits and veggies for a good while now. Those little oxygen absorbers, they're worth every penny. I find they really add to the longevity of your vacuum-sealed goods, especially for the longer hauls.

As for materials to avoid, you've got your ears open in the right direction. Certain types of plastic can indeed leach undesirable chemicals. My go-to these days are those heavy duty Mylar bags - they don't outgas and stand up well over time. Have had dehydrated apples that tasted just fine after 2 years in one of those bags with an oxygen absorber.

Now, what about the rest of you good folks? Anyone ever use glass jars for their dehydrated storage? Seems sturdy but I'm on the fence about light exposure
 
Mylar bags and oxygen absorbers have been a winning combo for me too. Just a note, don't forget to label and date everything! Anyone else got storage tricks to share?
 
Invested in a dehydrator a while back and it's been paying off in spades! Those oxygen absorbers are definite keepers. Anyone tried using desiccant packets as well?
 
Can't stress enough the importance of a solid labeling system! It's saved me from a couple of unexpected surprises over the years. As for glass jars, haven't ventured that route myself - always seemed too risky with potential breakage and the darned light exposure. But that's me, always on the cautious side. Anyone else taken this path?
