Root veggies are indeed tricky when it comes to long-term preservation. Have you tried growing and storing squash? They're quite hardy and can last for months if stored properly!
 
Squash is a good shout! Also, potatoes. Easy to grow, versatile, and can be stored in a cool, dark place for months. Roots giving you trouble still?
