What’s One Prep You Regret Not Doing Sooner?

I waited way too long to start seriously canning and preserving my own food. Growing a big garden was second nature, but for years I just froze or gave away the surplus. Seeing how quickly shortages can hit, I wish I’d leaned into water bath and pressure canning much earlier. Not just for jams and sauces, but for whole meals, beans, and broths. Canning used to seem intimidating, but once I got the basics down, the payoff was huge—those shelves of ready meals are real peace of mind.

Drying herbs and making my own tinctures is what I wish I'd started sooner. The garden always gave so much—sage, lemon balm, yarrow—and I used to just clip what I needed fresh. Now my cabinets are full of remedies that've gotten me through colds, burns, and sleepless nights. Anyone else find herbal preps gave them more confidence in handling the unexpected?
