What’s One Prep You Wish You’d Started Sooner?

If I could go back, I’d have started pressure canning a lot sooner. For years, I stuck with water bath and dehydrating, but having the ability to store complete meals (soups, stews, even meat) shelf-stable is a real game changer, especially for long-term situations where freezer space or power isn’t guaranteed. There’s a learning curve, and the gear isn’t cheap, but the peace of mind is worth it. Also, canning opens up so many options for using garden surplus.

Curious what others found themselves wishing they’d tackled earlier. Was it a particular skill like foraging or ham radio? Or maybe building up water storage, or starting a solar setup?
