What’s One Prep You Wish You’d Started Sooner?

Wish I’d started pressure canning meats much earlier. Took me years to get comfortable with it, and now it’s clear how big a difference it makes for shelf stability and variety. Anyone else put off learning a skill that, looking back, seems essential? Curious what others wish they’d tackled sooner—skills, gear, habits? Always surprises me what ends up mattering most.
 
Should’ve started composting way sooner—seriously changes your whole garden game. Did anyone else wait ages before realizing how easy it actually is?
