What’s the One Prep You Wish You’d Started Sooner?

Wish I’d gotten serious about building water storage way earlier. Figured you can always find a source until that boil order hit last year. What’s the one prep you regret delaying, and did it ever actually bite you?
 
Really wish I’d started learning about food preservation sooner—especially canning and dehydrating. First big storm outage, all that food in the freezer spoiled and I swore I’d never let it happen again. Took me a few years to actually get off my butt and buy the right supplies though. Did anyone else put off learning a skill just because it seemed intimidating at first?
 
Getting into gardening sooner would’ve saved me a ton of stress during that big store shortage a while back. I always thought I’d just pick it up “one day” but didn’t realize how much trial and error there is. Fresh food is great, but understanding how to make it last—wish I’d connected those dots earlier too. Anyone else find it way harder than expected to get seeds started indoors?
