Best DIY Methods for Long-Term Food Storage?

Been playing around with several methods for long-term food storage lately. My favorite so far is vacuum sealing dry goods in jar containers. You got your beans, rice, lentils, all the staples really - they last for years that way with little to no loss in quality.

I've also got a root cellar going for potatoes and apples, and such. It’s a simple, effective method, as long as the temps stay steady enough. I'm also into canning, but that's more for preserving garden produce and less about long-term storage.

But I've got a query for y'all. What about protein? I'm not too keen on the idea of vacuum sealing meats. That seems like a recipe for disaster. Anyone got any experience with that? Or suggestions as far as getting protein prepped for storage goes?

Also, has anyone tried dehydrating meals? Like, making a stew and then dehydrating it to store? How'd that turn out? Seems like a huge time saver for emergency situations.
