Best Foods to Stock for a 3-Month Emergency Supply

Looking to tighten up my 3-month food supply and want to avoid stuff that’ll go bad too fast. What staples have you actually rotated through and found hold up best? Thinking beyond the basics like rice and beans—anything underrated?
 
Canned potatoes have been a surprise winner for me—they last ages and are super versatile. Powdered milk is another staple I actually use and it’s great for everything from baking to coffee. Crackers (sealed well) last a good while and break up the monotony. Ever try shelf-stable tofu? Doesn’t take much space and can be used in so many recipes. Wondering if anyone else here keeps dried fruit or is it too much of a treat and not practical?
