Best Shelf-Stable Foods for Long-Term Emergencies?

Looking to rotate my stockpile and want to make sure I'm not missing any underrated shelf-stable foods. What are your go-to items that have a super long shelf life but don't get a lot of attention? Curious about stuff beyond the usual rice and beans.

Powdered eggs are one I keep on hand, way more versatile than folks realize and they last for years if stored right. Also, canned pumpkin—doesn’t just work for pies, it’s packed with nutrients and goes in soups or stews. Shelf-stable tofu is another good protein option most people overlook. Anyone had luck storing freeze-dried veggies for a really long stretch?
 
Freeze-dried veggies have held up well for me—still crunchy after five years! Ever tried storing dried mushrooms? They pack a ton of flavor and nutrients in a small space.
 
Dried lentils don’t get nearly enough credit—they come in different varieties, cook up quicker than most beans, and store forever if you keep them dry. I also swear by bouillon cubes or powder, not just for flavor but because a hot cup of broth is a real morale booster in tough times. Dehydrated hummus mix is another one; just add water, and it works as a dip, a spread, or even mixed into rice for some extra protein. And if you’re into gardening or foraging, dried fruit leather made from apples, pears, or even wild berries is a great, energy-dense snack that packs small.

Honey’s another one—never spoils, can sweeten anything, and even has medicinal uses. I like to keep a few cans of sauerkraut and pickled veggies too; the vinegar base helps ‘em last ages and you get some variety for your gut.
