How Long Can You Really Rely On Stored Food?

It’s easy to find shelf life charts for canned goods and freeze-dried foods, but real-world experiences often differ from what’s printed on the labels. Has anyone actually eaten home-canned or store-bought food well past its “best by” date? I’m curious about any noticeable nutrition loss or taste changes. I've eaten peaches I canned 3 years back, tasted a bit dull but totally fine. As long as the seal’s good, I’ll risk it—unless it smells off. Anyone notice vitamins dropping off?
