What’s One Prep You Wish You’d Started Sooner?

Wish I’d started pressure canning a lot earlier. Only got serious about it a few years ago and it’s made such a difference building up a reliable food stash, especially with my garden harvests. The peace of mind from having homemade meals shelf-stable just can’t be beat. Curious what others regret putting off—was it water storage, radio comms, skills training? What would you go back and start sooner if you could?

Should’ve learned about water storage way sooner, honestly—figured the tap would always work. Anyone else surprised by how tricky it is to keep it fresh for months?
 
Totally hear you on underestimating water storage—I did the same, just assumed the city pipes would always be pumping. Keeping it fresh is way more work than I thought, and I learned the hard way that old plastic can make water taste funky fast. These days I rotate my stash a lot more often and moved to glass jugs for some of it. Anybody tried
